Omelets

Omelets- it's a staple around here. We go through about a dozen and a half eggs every time we cook breakfast- whether it's for dinner or breakfast. Think about it this way- 2 eggs for Ben's Bird's Nests, that I will save for another day, and then the many omelets I have to make -- 3 eggs for Dallas, 5 eggs for Jordan and Noah, 5 eggs for Isaiah and I. Ok, not quite a dozen and a half, but close. We like our omelets. I'll add my recipe below. Nothing fancy, but we love it! 



Omelets 

2-4 eggs scrambled in a bowl - I do NOT add milk
2 Tbsp margarine

Fillings of your choice- 
Cheese- my guys prefer Colby Jack. I prefer Swiss or Medium or Sharp Cheddar
Mushrooms- fresh, cooked or not, or canned- your preference 
Onions
Bacon
Sausage
Leftover chicken, turkey, etc. 

Anything goes! 

Melt 2 tbsp margarine into a 6 inch skillet- MEDIUM LOW heat. DO NOT BURN BUTTER. 
Pour scrambled eggs into pan and shake pan gently to spread eggs over entire surface. 

I use a frying spatula to gently push eggs to center of the pan. This allows the extra eggs to run under omelet and cook more thoroughly. When eggs are set, flip omelet over. Top with cheese, meats, veges as desired. Turn off heat and fold omelet over toppings. 

EAT! 

Now, a note about pans, spatulas, and flipping eggs.
** Pans-  My brother would disagree with me, but I have several pans I use for omelets. Yes, you can buy a pan that is made especially for omelets, but I am happy with any small 6-8 inch frying pan with a non-stick coating. Do not use one that is bigger, because your omelet will be too thin and be more difficult to flip and fill. 
* *Spatulas- Yes, there is a difference from a baking spatula and a frying spatula. The ones you use to scrape a bowl of cookie dough are made for Baking. The one you flip a burger or egg with is for Frying. YES, they are different and in my kitchen they are kept in different drawers! Use the right tool for the right job! Frying spatulas are for frying eggs- Omelets are FRIED eggs. 
** Flipping your omelet- Ok, once again, my big brother would tell you I do this incorrectly, but hey, we rarely see eye to eye. He flips his eggs, omelets, and more with a flip of the wrist. YES, it's cool to watch. NO, I'm not doing it! I use a plate, usually a paper one or someone's plate I am about to serve their food on to flip my omelets. I simply slide the omelet to the plate and then flip in back into the pan. I do not try to be fancy - I do not want to have to clean any more than I already have to clean. THAT is a whole other story!
